What can I do with the black glutinous rice left after making the Purple Sweet Potato with Black Glutinous Rice Soup? Make some Bubur Hitam since it's my hubby's favourite dessert!
This dessert is super easy to make. What added to my joy was the stamp of approval and two thumbs up from my hubby after he tried a bowl of this yummy dessert!

Bubur Hitam
Ingredients:
180g black glutinous rice, washed and soaked overnight to soften
5 cups water
110g gula melaka
125ml coconut cream (I use kara. Put more if richer taste is desired.)

4 pandan leaves, washed and knotted
Method:
1.
Put the black glutinous rice and knotted pandan leaves into a pot and
add in 5 cups of water.
2. Bring to boil and let it simmer while stirring once in a while so that the rice do not stick to the pot. Keep an eye on the water level. It should not reduce too much.
3. Continue to cook the glutinous rice until it looks soft and plump and the the consistency of the liquid is slightly thickened. Add in gula melaka and stir till it's dissolved.
4. Stir in the coconut cream.
5. Scoop into serving bowls and serve warm.
Note :
I will drizzle some coconut cream onto the bubur hitam while serving.
