Doraemon Doriyaki (铜锣烧)


I have made a small batch of Doraemon's favourite snack - Doraemon Doriyaki after much cajoling from my daughter to make some for her to bring to school.

Doraemon is the cute Japanese manga and anime robot cat and Doraemon Doriyaki is the cat's favourite sweet treat. This snack is basically a Japanese pancake with red bean filling sandwiched in between.


The pancakes taste really good and seeing my girl devouring them makes me wonder why hadn't I made them more often...:)


Doraemon Doriyaki (铜锣烧)
makes about 8

Ingredients:
2 eggs
60g sugar
1/2 tbspn honey
1/2 tsp vanilla extract
80g cake flour
1/2 tsp baking powder
1 tsp water (add only if batter is too thick after taking out from the fridge)
For filling, can use store bought red bean paste, nutella, peanut butter or kaya

Method:
1. In a large bowl, combine eggs, sugar, honey and vanilla extract and whisk well until the mixture is fluffy.



2. Sift in flour and baking powder and quickly mix till combined. Do not overmix or the Doriyaki will be hard.



3. Cover the bowl and put in the fridge to rest for 15 minutes.

4. The batter should be a little bit thicker than pancake batter but of pourable consistency. If the batter is too thin, Dorayaki buns will be too flat and not fluffy. If the batter is too thick, you can mix in 1 tsp water. (However, try to avoid this and if you need to do this, do not stir too much or the pancake will be hard.)

5. Heat a large non-stick frying pan on medium-low heat. Dip the paper towel in oil and coat the bottom of the pan with the oil. The pan should be slightly oiled but shouldn’t be visible. That’s the secret to getting a nice texture on the surface of Dorayaki. With a ladle, pour the batter into the pan to create a 3 inch diameter “pancake”. (Remember no to stir the batter)


6. When the surface of batter starts to bubble, flip over and cook the other side.



7. Transfer to a plate and cover up with damp towel to prevent from drying.

8. Continue making pancakes.

9. Make sandwich with red bean paste (or nutella, kaya or any fillings preferred).


10. Put more red bean paste in the center so the shape of Dorayaki will be curved (middle part should be higher).

11. Quickly wrap them with cling wrap until you ready to serve.



Notes:
- Avoid breaking the air bubbles while mixing the egg mixture and flour to get fluffy pancakes.
- Use a flat non-stick frying pan. For even heat distribution, fry pancakes on an electric or induction hob as heat tends to concentrate at the bottom of the pan only on a gas stove. 
- Fry on medium-low heat to prevent burning the pancakes while the inside is still uncooked.
