Brookies

 


My darling girl wanted to bake something special for her classmates and close friends for ‘520’. She decided to do a combined bake of brownie and cookie. So I assisted her in baking this brownie and cookie dough combo - Brookies!

I had great fun assisting my girl. We did 4 batches of the recipe for her friends and had the pleasure of eating the trimmed ends of the delectable brookies.

Thumbs up from both of us and certainly hope her friends would love them!!


Brookies
makes a 10” x 12” baking tray

Ingredients:
Brownie Batter
113g melted salted butter (if using unsalted butter, add 1/2 tsp salt)
35g cocoa powder 
100g sugar
100g brown sugar 
2 large eggs
1 tsp vanilla extract 
60g plain flour
135 chocolate chips or roughly chopped chocolate 

Cookie Dough 
113g salted butter, at room temperature (if using unsalted butter, add 1/2 tsp salt)
100g sugar
55g brown sugar 
1 tsp vanilla extract 
1 large egg
1/2 tsp baking powder 
1/4 tsp baking soda
160g plain flour
150g chocolate chips or roughly chopped chocolate 
30g chocolate chips or roughly chopped chocolate (for sprinkling over the Brookies batter)

Method:
For the Brownies
1. Whisk cocoa powder to the melted butter in a large mixing bowl. Add both sugars and whisk till moistened.


2. Add vanilla extract and eggs and beat well. (I used electric beater to save effort. Secret to glossy brownies is to beat eggs and sugar very well.) 



3. Add in flour and mix with a spatula until a few steaks remain. (do not over mix)


4. Mix in the chocolate chips, mixing in any streaks of flour as well. 



5. Pour the brownie batter onto a lined baking tray and spread out to a thin layer. Set aside. 



For the Cookie Dough
6. Beat butter and sugars in a large mixing bowl until light and fluffy, stopping to scrap down the sides of the bowl as needed. 

7. Mix in vanilla extract and eggs and scrap down as needed. 

8. Add in baking powder, baking soda and flour and mix till just combined. 

9. Fold in 150g chocolate chips to the cookie dough with a spatula. 


Assembly
10. Drop spoonfuls of the cookie dough to the brownie batter. Sprinkle 30g chocolate chips over the Brookies mixture. 



11. Cover the tray with aluminium foil bake in preheated oven at 175C for 20 min. Remove the aluminium foil and bake for another 20 min uncovered.



12. Cool in baking tray on wire rack when done before cutting.


Note
- Ensure baking tray is lined for easy removal of the Brookies
- Make sure to let the Brookies cool completely before slicing as they will be too soft to slice when warm.
- You can add grated orange zest, mini marshmallows or different flavoured extracts for different variations.
- You can add 3/4 cup chopped toasted almonds, walnuts or pecans to the batter for added crunch and flavour.
- You can enjoy the Brookies on its own or warm the Brookies up slightly and serve with a scoop of ice cream.
