If you watch Doraemom, you will know that this super cute robot cat's favourite sweet treat is Dorayaki. Dorayaki is basically a Japanese pancake sandwich. The original Dorayaki contains red bean paste, but it has become so versatile that other fillings like Nutella, jam, ice cream, etc are used to sandwich the two pancakes.
For this morning's breakfast, I made an assortment of this quick breakfast using store-bought red bean paste, nutella and kaya as fillings.
These pancakes taste so good that every bite leaves you wanting for more.
Doraemon Doriyaki
makes about 6
Ingredients:
2 eggs
60g sugar
1 tbspn honey
100g cake flour (can also use all-purpose flour)
1/2 tsp baking powder
2 tsp water
For filling, can use store bought red bean paste, nutella or kaya
Method:
1. In a large bowl, combine eggs, sugar, and honey and whisk well until the mixture is fluffy.
2. Sift in flour and baking powder and quickly mix till combined. (Do not overmix)
3. Keep in the fridge to rest for 15 minutes.
4. Stir in water and mix till smooth. It should be a little bit thicker than pancake batter. If the batter is too thin, Dorayaki buns will be too flat and not fluffy.
5. Heat a large non-stick frying pan on medium-low to medium heat. Dip the paper towel in oil and coat the bottom of the pan with the oil. The pan should be slightly oiled but shouldn’t be visible. That’s the secret to getting a nice texture on the surface of Dorayaki. With a ladle, pour the batter into the pan to create a 3 inch diameter “pancake”.
6. When the surface of batter starts to bubble, flip over and cook the other side.
7. Transfer to a plate and cover up with damp towel to prevent from drying.
8. Continue making pancakes.
9. Make sandwich with red bean paste (or nutella, kaya or any fillings preferred).
10. Put more red bean paste in the center so the shape of Dorayaki will be curved (middle part should be higher).
11. Quickly wrap them with cling wrap until you ready to serve.
