Blueberry Oat Cookies


Would you like to have blueberries in a cookie? I would, anytime!


These cookies are bursting with the goodness of blueberries and are so, so, so simple to make. I've used dried blueberries and rolled oats to make these yummilicious fibre-rich chewy cookies. It's great to either have it for breakfast or to snack on.


These are the dried blueberries I used. I've snacked on some of them before using the rest in this bake. These babies are packed with lots of health benefits.


If you are wondering where is the butter, my answer is...this recipe does not call for any butter or oil. I gathered the cookies still tasted great despite no butter or oil added because I've added greek yogurt. I've used Chobani's greek yogurt with less than 0.5% fat. Take note though that if you are looking for crispy crunch cookies, then this recipe is not for you.

Blueberry Oat Cookies

Ingredients:
100g rolled oats
130g plain flour, sifted
1 tsp baking powder
55g brown sugar 
2 tbsp honey
1/2 tsp cinnamon powder
1/4 tsp salt
75g plain greek yogurt
1 egg
2 tsp vanilla extract
75g dried blueberries

Method:
1. Preheat oven at 180C and line tray with baking paper..

2. In a mixing bowl, put in rolled oats, flour, baking powder, brown sugar, cinnamon powder and salt and give it a whisk with a hand whisk to combine together.



3. In a separate mixing bowl, combine greek yogurt, egg and vanilla extract. Stir till well combined.




4. Pour the wet ingredients in step 3 to the dry ingredients in step 2. Stir till just combined. (Do not overmix)



5. Stir in the dried blueberries.



6. Drop spoonfuls of the cookie batter onto a lined baking tray.


7. Bake in preheated oven at 180C for 13 - 15 minutes, until just slightly browned.

8. Remove from oven.

9. Let cool on wire rack completely before storing in an airtight container.
