Cornflake Cookies


If you are one who likes crunch in every bite of cookies that you eat, you are at the right page. 

Ever since I've started using this recipe last year, there was no turning back to other recipes I've tried. This Cornflake Cookies recipe shared by my friend Meng Choo was particularly well received by family and friends.

My girl took a bite and her eyes immediately lit up and then she gave it her BIG THUMBS UP! What more is there to say? :)




Cornflake Cookies
recipe from Tan Meng Choo
makes 90-100 cookies

Ingredients:
250g unsalted butter
165g caster sugar
1 egg
65g crushed cornflakes (I crushed them lightly only)
3/4 tsp vanilla extract
310g plain flour
1 tbspn  baking powder (yes, it is 1 tablespoon and not a typo error)
Pinch of salt
200g lightly crushed cornflakes for coating

Method:
1. Sieve together plain flour and baking powder. Add in salt and set aside. 

2. Cream butter and sugar till light and fluffy.


3. Add in eggs and vanilla extract and mix well.


4. Fold in sifted flour mixture.


5. Add 65g crushed cornflakes and mix well.


6. Chill the batter in the fridge for 20-25 minutes.

7. Lightly roll the cookie dough into balls and coat them with crushed cornflakes.


8. Place the cornflake balls onto lined baking tray, leaving 1 inch apart from each other.


9. Bake in preheated oven at 180C for 20-22 minutes or until golden brown. (I baked for 22 mins)


10. Cool on a rack before storing in air-tight container.

  7. Thx for sharing recipe. I tried and the taste is good. However part of my cookies are burn.i baked 22mins under 180.can advise where should improve?

    1. Hi Vanessa, I suspect it could be due to uneven baking in the oven. Different oven differs so you will need to experiment and adjust your baking time and temperature accordingly. For uneven baking, you could try rotating your baking tray halfway through the baking time. Hope this helps. :)

  10. I dont hv caster sugar...can i substitute it with fine granulated sugar?

  13. Hihi...if my cookies are burnt, should i just shorten the baking time without adjusting the temp?

  15. tried and the cookies had a horrible bitter aftertaste. googled and it could be due to the baking soda. 1 tablespoon was too much!! wasted the entire batch

    1. Dear Erica, sorry to hear about your bad experience. The recipe has asked for baking powder and not baking soda. They are different ingredients. So you have used the wrong ingredient.
