Pineapple Rice is a very simple and easy rice cooker one-pot meal that I will always make when I have pineapple premix, cashew nuts and pork floss on hand.
I added chopped chicken breast meat this time. I've had occasions where I didn't add any chicken meat and it didn't affect the taste of the pineapple rice.
I'm using Asian Home Gourmet's pineapple rice paste. I simply add this and all other ingredients to the rice cooker, mix and cook...and dinner can be served all under 30 minutes!
Pineapple Rice
Serves 6 (we are small eaters)
Ingredients:
2 cups of uncooked rice
Method:
2. Pour in the pineapple rice premix.
3. Add in all other ingredients except the cashew nuts and pork floss.
5. When the rice is cooked, gently give the rice a stir using a rice paddle to mix in with the rice and other ingredients in the process.

1 cup frozen mixed vegetables
1 cup frozen cooked prawns
1 can cubed pineapple
A handful raisins (optional)
some cashew nuts and pork floss for garnishing

Method:
1. Wash rice, then add water to the rice in rice cooker pot to the appropriate level.
2. Pour in the pineapple rice premix.
3. Add in all other ingredients except the cashew nuts and pork floss.
4. Cover with lid and start to cook the rice.
5. When the rice is cooked, gently give the rice a stir using a rice paddle to mix in with the rice and other ingredients in the process.
6. Keep covered for a few minutes.
7. Serve warm with some cashew nuts and pork floss as garnish.
