Shortly after making the Champion Bread Loaf, I decided to make a Champion Sweet Potato Bread variation of this bread by adding sweet potato.
I bought some purple sweet potato a few days ago and suddenly had this urge to add this to my bread since purple sweet potato has high nutritional values. This time round I used my trusted Zoji breadmaker to knead the bread dough and then when the dough is proofed, baked in the oven in the San Neng Pullman tin (SN2052, 196 x 106 x 110mm) I bought from Phoon Huat. My friend Cheryl shared that in addition to using the 'Dough' function, increasing the kneading time by adding the 'Pasta Dough' function first will yield even better results.
My girl went ooohh and aahhh because the bread was in her favourite colour - PURPLE! Again, super love this recipe as the texture is so soft and fluffy even after 2 days!

Champion Sweet Potato Bread (Oven-baked in a Pullman tin)
refer to my notes in red if baking bread using breadmaker
Ingredients:
(A) Sweet Potato Puree
200g Purple sweet potato
40-45g water
(B)
Sweet Potato Puree (A)
198g Milk
300g Bread flour
24g Sugar
1 tsp Salt
1 tsp Instant yeast
15g Unsalted butter
Method:
1. Microwave the sweet potato with some water for 4 minutes. Pour away excess water and mash the sweet potato.
2. Place all ingredients into the pan except butter based on the sequence listed above or by following your breadmaker manufacturers' instructions regarding the order of liquid/dry ingredients.

(I'm using Zojirushi breadmaker. I placed all the wet ingredients first, followed by the dry ingredients. Make a dent at the centre of the flour and pour the yeast in the dent last, making sure the yeast does not touch the liquid, sugar and salt.)
3. Make the selection for 'Pasta Dough' setting on your breadmaker.
(For my Zojirushi breadmaker, I chose the 'Cookie/Pasta Dough')
4. Press start and the machine will start kneading the dough.
5. After the machine has finished its course of kneading under 'Pasta Dough' setting, make the selection for 'Dough' setting. (For baking bread in the breadmaker, I will select 'Soft' mode selection.)
6. Press start and the machine will start kneading the dough after resting for 15 minutes. Add in the butter during this resting stage.
7. Let the breadmaker do the rest. (For baking bread in the breadmaker, the bread will be ready in about 3 hours for 'Soft' mode selection. Skip to step 12.)
8. When the bread dough is proofed, the machine will beep to signal the end of the 'Dough' function. Remove dough from the pan, punch it down and divide into 3 portions.
9. Roll up each portion and place in the pullman tin. Proof for 40 minutes with lid on until the dough rises to about 90% of the tin. (My pullman tin is San Neng brand SN2052, 196 x 106 x 110mm)
10. Bake in preheated oven at 200ºC for 40 minutes.
11. When the bread is done, remove the bread from the tin immediately and let it cool completely on a wire rack before slicing.

DeleteI've also used the recipe to bake using BM. I selected pasta dough mode first and then continue with soft mode so as to have a longer kneading time. :)

DeleteThis bread can be kneaded by hand or using a mixer, though I've not attempted it and have always kneaded my bread dough using my breadmaker. I'm afraid I do not have the exact instructions to advise, but reading from books and bread recipes, you will knead your dough until window pane stage. Then cover your dough in a plastic wrap and proof the dough for about an hour or until the dough double in volume. Thereafter, on a slightly floured surface, punch down the dough and divide into 3 portions. The rest would follow from step 9.

Hi I followed your recipe but the dough was too wet to handle after mixing in the BM. Did you have the same problem or do I need to reduce the amount of milk?

DeleteDid you drain off all excess water during mashing of the sweet potato? It will be wet to handle if this is the case. Then you can either adjust by reducing the milk. Otherwise, you could add bread flour while kneading by teaspoon until the mixture is easy to handle.
Hi LY, yeah I drained off the excess water. I added plain flour while kneading but the bread turned out quite dense and heavier than the usual bread if I just use the normal recipe without the addition.. Will try to reduce the liquid next time

DeleteToo much flour added can also cause the bread to be dense. Perhaps you can also increase the kneading time by hand. It happened to me during my first try as I hadn't drained off the excees water from the steaming. It was messier but the additional kneading helped.
