Coconut Nutty Granola


Granola is a staple in my household. I regularly make a batch of these handy go-to snacks for my 'breakfast table' and 'snack bar'.

I just made another batch recently. This time I added unsweetened coconut flakes and used Medella's Organic Premium Coconut Cooking Oil. To add more crunch, I've added sunflower seeds, melon seeds, almonds and walnuts. I also added a dash of cinnamon powder and super like the wonderful aroma while the granola was baking in the oven! The whole bake ended with addition of raisins during the last 10 minutes and it's done.

This is a very easy snack to put together. The best part is....there is minimal washing up as I've mixed all the ingredients and baked them in the same tray!


Nutty Homemade Granola

Ingredients:
4 1/2 cups (475g) rolled oats
1 tsp salt
2 tsp cinnamon powder
1 cup nuts, roughly chopped (I used a mixture of almond and walnut)
1/2 cup sunflower seeds
1/2 cup melon seeds
50g raisins
60g unsweetened coconut flakes
70g coconut oil (I used Medella's Organic Premium Coconut Cooking oil)
70g honey
70g brown sugar

Method:
1. Measure out all ingredients and place all except the coconut flakes and raisins in a baking tray. (There is no need to grease the tray. Due to the small size of my oven, I used a 9" square pan. But do use a bigger baking tray if you can as it will cut down your baking time.)

 
2. Using hands or spatula, mix in all the ingredients well. (I wore a glove so that the mixing and handling is not so messy)


3. Mix in the coconut flakes.



4. When all the ingredients are well mixed, even out the nutty-coconut oat mix and bake in preheated oven at 160C, first for 20 minutes. After 20 minutes, remove tray from oven and stir with a spoon. Put the tray back into the oven and bake for 5-10 minutes before taking out to stir again. This is to ensure even baking. Repeat this until the granola mixture is lightly browned. Add in the raisins and bake for another 10 minutes. (If you are using a large tray, the whole baking time would be around 30-40 minutes. Every oven is different so you will have to suit the baking time according to your own temperature. As I am using a smaller 9" pan, I took around 1 hour)



5. When done, let the granola cool in tray completely on a wire rack before storing in an air tight container.
