Chocolate Bubble Rice Cookies 泡泡米曲奇


I knew I had to make these cookies and had it bookmarked the moment I saw Ann's post. I'm so glad I did and I just can't stop popping these crunchy cookies into my mouth while watching my favourite movie.

Making another batch as these will be a great addition to my Chinese New Year bakes too!



Bubble Rice Cookies 泡泡米曲奇
recipe from Anncoo Journal

Ingredients:
130g unsalted butter
60g sugar
1 large egg
1 tsp vanilla extract
170g plain flour
1/2 tsp baking soda
Pinch of salt
80g rice bubbles (I bought Crispy Rice Puff Brown from Phoon Huat)
70g chocolate chips


   
Method:
1. Cream butter and sugar till pale and fluffy.

2. Add egg and vanilla extract. Mix well.

3. Sift in flour, baking soda and salt and continue to mix well.


 
4. Lastly pour in crispy rice and chocolate chips and fold in well with a rubber spatula.

5. Scoop the cookie batter with a dessert spoon and drop onto a line baking tray.

6. Bake at preheated oven at 150C for about 25 minutes or until golden crisp.
7. Cool cookies and store in an airtight container.
