If you are one who likes crunch in every bite of cookies that you eat, you are at the right page.
Ever since I've started using this recipe last year, there was no turning back to other recipes I've tried. This Cornflake Cookies recipe shared by my friend Meng Choo was particularly well received by family and friends.
My girl took a bite and her eyes immediately lit up and then she gave it her BIG THUMBS UP! What more is there to say? :)
Cornflake Cookies
recipe from Tan Meng Choo
makes 90-100 cookies

250g unsalted butter
165g caster sugar
1 egg
65g crushed cornflakes (I crushed them lightly only)
3/4 tsp vanilla extract
310g plain flour
1 tbspn baking powder (yes, it is 1 tablespoon and not a typo error)
Pinch of salt
200g lightly crushed cornflakes for coating
Method:
1. Sieve together plain flour and baking powder. Add in salt and set aside.
6. Chill the batter in the fridge for 20-25 minutes.
10. Cool on a rack before storing in air-tight container.

ReplyDeleteHi LY,I'm one of the person who likes every crunchy bite ...hehehe
ReplyDeleteso, could I have some to fulfill my hungry mouth?
Hi Lai Ying, cornflake cookies are a must at CNY! love these because they are really one mouthful each!
ReplyDeleteThx for sharing recipe. I tried and the taste is good. However part of my cookies are burn.i baked 22mins under 180.can advise where should improve?
ReplyDeleteHi Vanessa, I suspect it could be due to uneven baking in the oven. Different oven differs so you will need to experiment and adjust your baking time and temperature accordingly. For uneven baking, you could try rotating your baking tray halfway through the baking time. Hope this helps. :)
DeleteHi LY, thanx for your comments. I think i need practice more to know how the oven temperature. btw this is my first attempt to bake cookies. Really appreciate and thx you share the best recipe to us. ;)
DeleteHi Vanessa, I had the same issues too when I first started. After 'knowing' your oven more, it would be ok. Happy baking! :)
DeleteHi,like to ask your baking powder is one tablespoon or one teaspoon . Tia..
ReplyDeleteHi, there is no typo. It is 1 tablespoon. :)
DeleteHi.. Can I know how long can we keep the cookies?
ReplyDeleteHi ahyingying, it should keep well in air-tight containers for 3-4 weeks.
DeleteI dont hv caster sugar...can i substitute it with fine granulated sugar?
ReplyDeleteHi LP, yes you can use fine granulated sugar.
DeleteCan use salted butter instead of unsalted? Thanks!
ReplyDeleteHi Christina, I suppose you can but do omit the salt.
DeleteCan cranberry be added in?
ReplyDeleteHi,
DeleteSure, you can add cranberries. :)
Tried it this morning and - perfect recipe. - Easy and delicious.
ReplyDeleteThank you.
Hi Hweiling, Thanks for trying this out and happy that you like it!
DeleteHihi...if my cookies are burnt, should i just shorten the baking time without adjusting the temp?
ReplyDeleteHi Huihui,
DeleteYou can adjust the temp and monitor and baking time accordingly.
I would like to thank you for the efforts you have made in writing this blog. Very Informative post with Images. very interesting topic regarding Kids Baking Set
ReplyDeletetried and the cookies had a horrible bitter aftertaste. googled and it could be due to the baking soda. 1 tablespoon was too much!! wasted the entire batch
ReplyDeleteDear Erica, sorry to hear about your bad experience. The recipe has asked for baking powder and not baking soda. They are different ingredients. So you have used the wrong ingredient.
DeleteThanks for the recipe. It is so easy & crunchy! Even little kids love them!
