Almond Cookies and US$160 Chinese New Year Ang Pow Giveaway


Almond Cookies are another of my favourite goodies that I will have in my household during Chinese New Year. 

Unlike the pineapple tarts, this is definitely a breeze to make (there's minimal washing as other than your baking trays, you only need a large mixing bowl), yet the satisfaction and enjoyment in making and savoring this fragrant, nutty cookie is not much lesser.

I've added some diced almonds to the dough to give it more texture and crunch. I'm finding the cookie so addictive that it's difficult to stop at just one!



Almond Cookies
makes around 50 cookies

Ingredients:
For the Cookies
180g plain flour
110g confectioner's sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
125g almond meal
80g diced almonds
1/4 tsp almond essence (optional)
125g canola oil (can also use peanut oil for for fragrance)

For the Egg Wash
1 egg yolk, beaten plus 1 tbspn milk

Method:
1. Sift together flour, confectioner's sugar, baking powder and baking soda. Mix in salt, almond meal and diced almonds and give it a good stir.


2. Mix almond essence into oil and pour into the flour-almond mixture and mix to form a dough.


3. Shape dough into small round balls and arrange on lined baking tray.


4. Brush with egg wash and bake in preheated oven at 160C for 20-25 minutes or until slightly brown.

5. Cool completely on wire rack before storing in air-tight containers.
