My husband loves Kenny Roger's and one of the must-haves would be their Corn Muffins! I've tried a few corn muffins recipes but I like this recipe from Piece of Cake most. Even my girl who doesn’t take to corn gave her two thumbs up for this corn muffin recipe!
So whenever there is an urge for corn muffins, there will not be a need for us to go down to the nearest Kenny Roger's. We will be able to have our 'Almost Kenny Roger's Corn Muffin' freshly out from the oven in the comfort of our home.

Almost Kenny Roger's Corn Muffins
makes about 12 muffins
Ingredients:
1/2 cup (113g) butter
2/3 cup sugar (I reduced to about 1/3 cup)
1/4 cup (45-50g) honey
2 eggs
1/2 teaspoon salt
1 1/2 cups (200g) all-purpose flour
3/4 cup (90g) yellow cornmeal
1/2 teaspoon baking powder
1/2 cup (108g) milk
3/4 cup (80g) frozen yellow corn
Method:
1. Preheat oven at 200ºC.
2. Cream together butter, sugar, honey, eggs and salt in a large bowl.
3. Add flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing.
4. Add corn to mixture and combine until corn is worked in.
5. Fill the muffin cuo with batter and bake for 20-25 minutes or until muffins begin to turn brown on top.
