Orange Butter Cookies


I’ve not made butter cookies in a while. Made a batch of Orange Butter Cookies to enjoy since a saw some oranges in the refrigerator.

This cookie uses creaming method. Shaping of the cookie is by piping. Definitely had fun baking this cookie!


Orange Butter Cookies
makes about 24

Ingredients:
95g unsalted butter, cubed
25g icing sugar
25g rice flour (sifted)
75g cake flour
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp orange essence 
1 tsp orange zest

Method:
1. Preheat oven at 170C.

2. Add sifted rice flour, cake flour and orange zest in a mixing bowl. Set aside.

3. In another mixing bowl, add in butter and icing sugar. Press down to spread out the butter with a spoon. Add in orange essense and cream butter and icing sugar till light and fluffy with a hand-held mixer. (Use spatula to scrap down the sides of the bowl in between mixing)

4. Add in flour mixture and fold in using a spatula. 

5. Scoop the cookie dough into a piping bag with a star nozzle. 

6. Pipe out each cookie in your desired shape onto a lined baking tray, with cookie evenly spaced.

7. Bake in preheated oven at 170C for 13-15 min or till golden brown. 

8. Cool on wire rack when done and store in air-tight container when totally cooled.
