These nutty Pistachio Biscotti are not only addictive but also make a great accompaniment to a cuppa anytime!
Biscotti are biscuits that are baked twice. Due to that, they are usually more expensive than normal cookies. Really not a difficult biscuit to make and so, so yummy!

Pitachio Biscotti
makes about 2 loaf pan (40 per tray)
Ingredients:
80g egg white
80g sugar
90g plain flour
80g pistachios
1/4 tsp salt
Method:
1. Preheat oven to 170C.
2. Whisk egg white till foamy. Gradually add in sugar and whisk until firm peak.
3. Fold in flour, salt and pistachios.
4. Pour mixture into lined loaf pan or paper mould.
5. Bake in preheated oven at 170C for 20 min or until golden brown.
6. Remove pan from oven and let cool.
7. Unmould 1st baked cookies and slice evenly using a serrated knife.
8. Place the sliced cookies onto a lined baking tray.
9. Bake at 130C for 20 min or until golden brown. (125C for about 40 min if it is a thicker slices)
10. Cool on wire rack when done and store in container when totally cooled.
