Walnut Brownie


I'm craving for some brownies and whipped up this very simple and easy Walnut Brownie to go with a scoop of ice cream.


It certainly is satisfying to have this indulgence in this hot weather! And the best part of it is - there is minimal washing to do. 

I am also using Medella's Organic Premium Coconut Cooking Oil to bake my brownie.

Many have asked me if the food cooked/baked with this coconut oil will leave behind a very strong coconut oil smell. No worries at all. Not only does it not affect the taste of your food, there is also no smell at all! Walnut Brownie
makes a 8" square pan

Ingredients:
140g oil (I use Medella's Organic Premium Coconut Cooking Oil)
180g brown sugar
100g cocoa powder
1/4 tsp salt
1/2 tsp vanilla extract
2 eggs
70g plain flour
50g chopped walnuts

Method:
1. Place oil, brown sugar and cocoa powder in a large mixing bowl and mix it over a double boiler till well mixed.



2. Add is salt and vanilla extract and mix well.

3. Mix in eggs, one and a time and mix well after each addition.



4. Sieve flour and mix walnuts into the flour.




5. Add in the flour and walnut to the batter and give it a quick mix till just incorporated.



6. Pour batter into a lined 8" square pan and bake in preheated oven at 200C for 20 minutes.


7. When done, remove from oven and let cool completely in the pan on a wire rack.
