Matcha Chocolate


I've always loved Nama Chocolate from Royce. Ever since I started making my own Nama Chocolate, I've tried on various flavours. Matcha Chocolate is one of them.



The matcha powder is perfect at bringing down the sweetness of the white chocolate. For green tea lovers,  you will surely love this lovely snack!


Matcha Chocolate
recipe from Just One Cookbook
makes 36 small chocolate squares using a 8" square baking pan

Ingredients:
400g white chocolate
125ml heavy whipping cream (I use Millac dairy whipping cream with 38% fat)
25g unsalted butter
2 tbspn matcha powder

2 tsp matcha powder, for sprinkling


Method:
1. Line a 8" square pan with parchment paper. Set aside. 


2. Heat the whipping cream at medium heat until bubbles start to form at the sides. Remove from heat and add white chocolate and butter to it. 




3. Leave to stand for 1-2 minutes. Stir until all the chocolate and butter has melted. 


4. When the butter and chocolate has melted and the mixture is smooth, sieve in the matcha powder. Stir the matcha powder into the mixture till well mixed.




5. Pour the matcha chocolate mixture into the lined baking pan.



6. Tap the baking pan a few times on the table top to remove any air bubbles.

7. Even the top with a spatula if required.

8. Leave in the refrigerator to set for about 4 hours or overnight.

9. When the chocolate has set, remove from the parchment paper. With a sharp knife, trim the sides of the chocolate block. Cut the chocolate block into 6 strips, then cut each strip into 6 smaller pieces. (Dip the knife into warm water and wipe dry after each cut)

10. Dust 2 tsp of matcha powder over the chocolate squares.



11. Keep the matcha chocolate chilled in the refrigerator until ready to serve. (the chocolate can keep in the refrigerator for about 3-4 days but mine didn't last that long)

12. Serve chilled.

    1. Hi Hui Kee, I bought the white couverture chocolate from Phoon Huat. You can also use Meiji white chocolate.
