Nutty Homemade Granola


I love granola. Not only is it one of my handy go-to snacks, it is also a great breakfast treat

I always have a tub of this at home, at times in the office. It is unimaginably easy to make and you can add as many other dried fruits as you like to it after you've baked them. (I added raisins to the mixture for baking and it was a mistake and it was a little bitter. Do add them only after the granola is done.)

Best part is....there is minimal washing up as you mix all the ingredients and bake them in one baking tray!

I always add almond and walnut to my granola for that nutty crunch. Unlike the previous Homemade Granola where I loaded the granola with lots of nuts, pumpkin seeds and dried fruits, this recipe did away with the seeds and the only dried fruit added was raisins. As I've mentioned earlier, I would suggest adding dried fruits only after the granola is done. I've increased the ratio of rolled oats by cutting down on the nuts. I've also added pecans as well and love the buttery flavor and additional crunch it lends to the granola!
 

Nutty Homemade Granola

Ingredients:
4 cups (420g) rolled oats
1 tsp salt
1 cup nuts, roughly chopped (I used a mixture of almond, walnut and pecan)
3 tbspn (50g) canola oil
1/4 cup (50g) honey
1/3 cup (50g) brown sugar

Method:
1. Measure out all ingredients and place all on a baking tray. (There is no need to grease the tray. Due to the small size of my oven, I used a 9" square pan. But do use a bigger baking tray if you can as it will cut down your baking time.)




 


2. Using my hands, mix in all the ingredients well. (I wore a glove so that the mixing and handling is not so messy)



3. When all the ingredients are well mixed, even out the nutty-oat mix and bake in preheated oven at 160C, first for 20 minutes. After 20 minutes, remove tray from oven and stir with a spoon. Put the tray back into the oven and bake for 5-10 minutes before taking out to stir again. This is to ensure even baking. Repeat this until the granola mixture is lightly browned. If you are using a large tray, the whole baking time would be around 30-40 minutes. Every oven is different so you will have to suit the baking time according to your own temperature. (As I am using a smaller 9" pan, I took around 1 hour)



4. When done, let the granola cool in tray completely on a wire rack before storing in an air tight container.
