I had intended to cook pumpkin rice for dinner yesterday. When preparing the ingredients, blur me realised I had run out of rice. Thankfully I had a pack of rice noodles (bee hoon to be exact) and cooked Pumpkin Fried Rice Noodles instead.
It's mostly estimation when it comes to cooking this dish. No hard and fast rules on how much meat, mushroom or seasoning you need to use as it really depends on individual preference. We are rather small eaters, so the amounts I've listed in the recipe below may be too little or too much for some.
We had a hearty dinner and really enjoyed the meal, especially my girl.
Pumpkin Fried Rice Noodles
serves 3
Ingredients:
1 packet rice noodles, soaked (enough to serve 3)
200g pumpkin flesh (without skin), cubed
150g minced pork, marinated with light soya sauce and sesame oil
50g shredded carrot
6 shitake mushroom, soaked and then sliced thinly (keep the water - about 300g)
6 cloves garlic, peeled and finely chopped
1 large onion, peeled and finely chopped
2 tbspn light soya sauce 1 tbspn dark soya sauce
2 eggs
Method:
2. Add in the minced pork and fry till they are just cooked.
3. Add in pumpkin, sliced mushrooms and shredded carrots and stir fry for about 3 minutes.
4. Drain the rice noodles and add to the fried pumpkin ingredients.
5. Add in the water from soaking the mushrooms, as well as the light and dark soya sauce.
6. Stir well and cover to braise for about 3 minutes, or until the noodles are cooked and the pumpkin is softened. (Add some water if it's too dry)
7. Stir in eggs.
8. Serve warm, as it is or with your favourite chilli sauce.

LY, small eaters ? Hee hee.. I cook half pack of rice noodle to serve 3 adults leh ... your pumpkin fried rice noodles look so tasty.

ReplyDeleteI cook pumpkin rice very often but never tried pumpkin fried bee hoon before (becos I am not good at frying bee hoon), it is certainly a very good idea for me to get rid of my butternut squash which are waiting to be harvested, heheh :)
This fried rice noodles look so special with pumpkin in it. I must bookmark this recipe and cook for my family. Thanks for sharing :)
