Lychee Yogurt Popsicle

I have been procrastinating...I had promised my girl that I will make a popsicle with her 2 weeks ago when she saw a FB posting of a fruit popsicle. She reminded me again a few days back and I finally made a Lychee Yogurt Popsicle with her.

I had bought a few bottles of this lychee yogurt drink at NTUC a few weeks back. I've never seen this lychee yogurt drink before at other NTUC outlets and was really drawn by it's cute packaging. Using this and some canned lychee meat, my girl made her very own popsicle!



We put some cut canned lychee meat into the popsicle mould and my girl had the honour to pour the lychee yogurt drink into the popsicle mould. Once done, pop them into the freezer. We did this in the morning and by night, we were able to have home-made lychee popsicle as dessert! How easy is that?!!

Lychee Yogurt Popsicle

Ingredients:
1 bottle of lychee yogurt drink (250ml)
some cut canned lychee meat

Method:
1. Put some cut canned lychee meat into the popsicle mould.

2. Fill the mould with the lychee yogurt drink.

3. Cover with the lid and chill in the freezer for at least 6 hours.

4. When ready to serve, run the sides of the popsicle moulds under running tap water and then pull each popsicle out gently.

5. Enjoy!

Note:
For a creamier and richer texture, you can mix in a little greek style yogurt to the lychee yogurt drink before pouring into the popsicle moulds.

    1. Hi Cheryl, it's really refreshing! You know I've always been complaining how hot my house is. This came as a cooling relief! Plus it's so easy to make. If you want the popsicle to be richer and creamier, you can mix in some greek style yogurt to the yogurt drink first.
