Chocolate Raspberry Tart (Non-baked)



What do you do when you have left over chocolate and digestive biscuits? I used them to make a Chocolate Raspberry Tart!

The Nutella Cheese Tart I made was very well received. Hence I decided to further adapt this rescipe into a Chocolate Raspberry Tart. I have most of the ingredients I need left over from making the Nutella Cheese Tart. I only need to pop over to the supermarket to get some raspberries.

You can never go wrong with chocolate. The raspberries and chocolate also work beautifully together, as the tartness of the raspberries is balanced by the sweetness of the chocolate. I've also added nutella to the crust and this added another depth to the flavour. This is such a lovely dessert to have!

Chocolate Raspberry Tart (Non-baked)
makes a 9" tart pan

For the Crust
Ingredients:
1 1/4 cup Digestive biscuits
6 tbsp Unsalted Butter, at room temperature (85g)
2 tbsp Nutella
1/4 cup Sugar (I used only 3/4 of this)

Method:
1. In a food processor, add all the ingredients for the crust and whiz it up until everything is finely crushed and when you pinch the mixture together, it holds well.
2. Press the crushed mixture firmly with the help of the back of a spoon onto the base and the sides of a 9” tart pan. Chill in the fridge for at least 30 minutes.

For the Filling
Ingredients:
1 cup Heavy Cream
1 1/4 cup Chocolate chips
Pinch of salt
2 punnets of Raspberries

Method:
3. Puree 1 punnet of raspberries in a blender. Pass it through a fine sieve and get rid of the solids. Set aside.
4. In a saucepan, add the cream and bring it to a simmer.
5. Pour the cream in a bowl with the chocolate chips and let it sit for about 3 minutes.
6. Stir until the chocolate is all melted and then stir in the raspberry puree and salt.

Assembly
7. Pour the chocolate mixture into the prepared crust pan and chill it in the fridge for about an hour and a half.
8. Arrange the raspberries over the top and place it back in the fridge to set further.
9. Serve chilled.

Note:
To get nice and clean slices, wipe your knife in between cutting each slice.
