Feeling lazy but still wanting to have a quick and easy home-cooked meal. I scratched my head and pondered what's for dinner...one-pot rice cooker meals like here, here or here? Or simple one-pot noodles like here, here or here?
I did a quick check with my daughter on her preference and she suggested pasta instead.
So I decided to make a One-Pot Creamy Chicken & Mushroom Tagliatelle inspired by Diana's One-Pot Pasta here. (I've previously used her recipe to make a One-Pot Chicken & Mushroom Alfredo)
This is such a life-saver and versatile recipe and dinner is served in a jiffy!! Yeah!!
One-Pot Creamy Chicken & Mushroom Tagliatelle
serves 3 Ingredients:
2 tbspn olive oil
400g boneless, skinless chicken breasts
3 cloves garlic, minced
200g mushrooms, sliced
A handful of honey cherry tomatoes
420ml low sodium chicken stock
170ml cream
200g tagliatelle, uncooked
1 cup shredded parmesan cheese
Salt and black pepper, to taste
Parsley for garnish
Method:
1. In a skillet (or pot), brown the
chicken (which has been seasoned with salt and pepper) in a little olive
oil. There is no need for the chicken to be cooked through as it will
be cooked further with the sauce later.
2. Add the minced garlic and cook for a minute.
3. Add the mushrooms and honey cherry tomatoes and saute for a minute.

4. Add the chicken stock, tagliatelle and cream.
5. Give this a stir and bring to a boil.
Then turn the heat down. Cover with a lid and let it simmer for 15-20
minutes, or until the tagliatelle is tender. Give a stir once in a
while.
6. If the liquid dries out, add a little more chicken stock and cream and continue to cook.
7. Once the tagliatelle is al dente, remove from the heat and stir in the parmesan cheese.
8. Season with salt and black pepper as desired.
9. Garnish with some parsley and serve.

What is the type of cream used? can i use whipping cream?
ReplyDeleteHi, I used Nestle cooking cream when I made this.
DeleteYou can also use whipping cream. I've also used Millac whipping cream on other occasions as well.
