Red Velvet Crinkle Kisses



I bookmarked the recipe the moment I saw how beautiful these Red Velvet Crinkle Kisses cookies look. I knew this would be a perfect surprise for my hubby for Valentine's Day

These cookies are rich and it's like eating brownie cookies. I couldn't wait and tried one myself. I LOVED IT! 

Make this for your loved ones. I'm sure they'll love it!

Since the 15th day of Chinese New Year is also drawing near, it's also a perfect timing to make these to share with your loved ones too!





Red Velvet Crinkle Kisses
recipe from Laura Vitale
(my notes in red)
makes about 24

Ingredients:
1 1/3 cup plain flour (150g)
2/3 cup sugar (150g - I reduced to 120g)
3 tbspn cocoa powder
1/4 cup unsalted butter, softened at room temperature (55g)
1 tsp baking powder
1/4 tsp salt
2 eggs
Red food coloring
1 tsp vanilla extract
1/2 cup confectioner sugar, for coating (60g)
 
Unwrapped Hershey kisses (I bought Hershey's white chocolate kisses with cookie bits. You can get the milk chocolate as well)



Method:
1. In a bowl, whisk together the flour, cocoa powder, salt and baking powder. Set aside.

2. In the bowl of a standing mixer fitted with a paddle attachment, cream together the butter and sugar. Add the vanilla extract and eggs; and mix until creamy and smooth. 


3. Add in the cocoa-flour mixture (dry ingredients) and mix them in long enough to combine. Add enough food coloring to achieve the intense red color you’re looking for. 


4. Place the dough in a bowl, cover and refrigerate for a minimum of 3 hours or up to overnight. 


5. Preheat your oven to 350F (I preheat to 180C). Line baking tray with parchment paper and set aside.

6. Using a small ice cream scoop or two spoons, form little balls of dough and coat them in the confectioner sugar. Place them a couple inches apart on your prepared baking tray.


7. Bake the cookies for 10-12 minutes. Remove from the oven and allow them to sit for 2 minutes (they will deflate a bit). Then place a little Hershey kiss onto each cookie.
