This is another cute cookie using the rub-in method. Here is my super adorable Apple Cookies!
I did not use my hands to do the rubbing-in and used my k-beater to do the job.
Making this cookie requires a little patience but seeing the cute cookies made all the effort worthwhile.
Apple Cookies
makes about 21
Ingredients:
190g unsalted butter
90g icing sugar
1/4 tsp salt
1/4 tsp baking powder
300g sieved plain flour
1/4 tsp vanilla essence
Red Dough (A) - about 55g
4-5 drops of red gel colouring
Green Dough (B) - about 15g
2-3 drops green gel colouring
Vanilla Dough (C) - balance about 210g
1/4 tsp vanilla essence
Sesame seeds for decoration (2 seeds on each cookie)
Method:
1. Mix flour, icing sugar, salt and baking powder in a mixing bowl.
2. Add butter to the flour mixture and rub in the butter using the k-beater until a dough is formed.
3. Weigh out into 3 dough (55g, 15g and balance 210g).
4. For the first 55g dough (Dough A), mix in 4-5 drops of red gel colouring. Set aside.
5. For the second 15g dough (Dough B), mix in 2-3 drops green gel colouring. Cover with cling wrap and set aside.
6. Mix in vanilla essence to the balance dough. Shape into a log and roll in a baking paper 20cm x 15cm. Close up the 2 ends of the dough with baking paper. (Chill for at least 30 min if softened)
7. Roll the red-coloured dough (dough A) onto a baking paper 20cm × 15cm and wrap around the vanilla log-shaped dough.
8. Wrap baking paper around the log dough and chill for at least 30 min till it firms up.
9. Cut out the dough into slices of 0.5cm thickness. Make an indent onto the circumference. Pinch a green dough and roll into a small leaf and place onto the indent.
10. Place the shaped cookies onto a lined baking tray and place 2 sesame seeds onto each cookie.
11. Bake in preheated oven at 170C for 20 min.
12. Cool on wire rack when done and store in container when totally cooled.
