My mom used to cook this dish. This is also a very common dish found in confinement menu. Yes, I'm referring to Sesame Chicken (麻油鸡).
This is another nostalgic dish that is not only surprisingly easy to prepare, but also has minimal washing as I'm just using one pot to cook everything...well, other than my rice cooker for cooking rice.
Sesame Chicken (麻油鸡)

Ingredients

900g chicken pieces (I used a combination of mid joint wings and chicken fillets)
2 tbspn oyster sauce
2 tsp sesame oil
2 tsp light soy sauce
2 tsp shao xing wine
Dash of pepper

4 - 5 cloves of garlic, lightly smashed, with skin on
4 - 5 cm ginger, sliced
4 - 5 cm ginger, sliced
70 ml sesame oil
2 tsp dark soy sauce
2 tsp dark soy sauce
Method
1. Marinate chicken with ingredients in Part A. Let it sit for about 15 minutes. Set aside.
2. Heat pot and saute garlic and ginger in 70 ml sesame oil till fragrant (about 3 minutes)
3. Add in marinated chicken and stir well.
4. Add 2 tsp dark soy sauce and water till almost cover the chicken.
5. Cook for about 25 - 30 minutes with lid partially on, stirring occasionally.
