Other than a small batch of blueberry muffins, I also baked a batch of these fragrant and yummy muffins for my girl's gathering with her pre-school friends over the weekend. It would have been my usual chocolate banana muffins except that I decided to add in some nutella swirls to the muffins this time round.
Make sure to use ripened bananas as they really add so much fragrance and natural sweetness to the muffins.
Mmmm...Thumbs Up!! :)
Nutella Swirl Chocolate Banana Muffins
makes about 24 small muffins
Ingredients:
275g plain flour
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
50g chocolate chips
3 large bananas, about 400g
100g brown sugar
1 large egg, lightly beaten
50ml milk
75g unsalted butter, melted and cooled
1 tsp vanilla extract
some nutella
Method:
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
50g chocolate chips
3 large bananas, about 400g
100g brown sugar
1 large egg, lightly beaten
50ml milk
75g unsalted butter, melted and cooled
1 tsp vanilla extract
some nutella
Method:
1. Preheat oven to 180C.
2. Sieve together flour, baking powder, baking soda and salt into a mixing bowl. Mix in the chocolate chips and set aside.
3. Mash the peeled bananas with a fork in a bowl. Add in brown sugar, egg, milk and melted butter. Mix until well combined. Stir in vanilla extract.
4.
Pour the liquid mixture into the dry ingredients. With a spatula, gently fold all the ingredients to form a wet batter. Stir
gently, using only a few strokes and mix until the flour are
incorporated into the batter. DO NOT Over mix. The batter should appear
lumpy.
5. Spoon batter into paper muffin cases until about 3/4 full.
6. Spoon in a teaspoon of nutella and give it a swirl with a skewer.
7. Bake for 20 mins until muffins turn golden brown or a toothpick inserted into the centre comes out clean.
