Omu Tomato Rice


What do you do with excess tomato rice? Why not make a omu rice! I did just that and my family had a really enjoyable meal.

It's really just a matter of assembling the fried egg and tomato rice together by using the fried egg like a popiah skin and wrapping the rice with it. Topped it with some ketchup and it's good to go! Simple, isn't it?


Omu Tomato Rice

Ingredients: 
some leftover tomato rice (refer here for basic tomato rice recipe)
2 eggs, beaten
2 tsp cream
1/2 tsp soya sauce
a dash of pepper
some cooking oil

Method: 
1. Heat up some oil in a non-stick pan.
2. Mix cream, soya sauce and pepper to the beaten egg and mix well.
3. Pour egg mixture to the heated pan. 


4. When the egg is slightly done on one side, scoop tomato rice onto the egg. Using the ladle, roll the egg to wrap the tomato rice. 



5. With the ends of the rolled fried eggs facing downwards, slide the omu rice onto the serving plate.
6. Pour some ketchup over the omu rice and serve hot.
