Mango Pudding in a Jar


I bought these really cute jars recently and thought of making mango puddings in them to enjoy.


This cooling and refreshing dessert is very easy to make and is a great make-ahead dessert if you are expecting some guests over your place.

As I only bought 3 jars, I made the balance pudding in a clear glass and it looks great too!


Mango Pudding in a Jar
serves 4

Ingredients:
1 1/2 tsp gelatine powder
30g sugar
60g water
1 ripened mango
130g evaporated milk (can replace with coconut milk)

Method:
1. Add sugar and gelatine powder to the water and let it sit aside for about 8-10 minutes to allow the gelatine to bloom. Then warm up the gelatine mixture over low heat until all dissolved. Set aside.


2. Put the mango flesh, evaporated milk and gelatine mixture into a blender or food processor and give it a good blitz until the mango is pureed and all the ingredients are well blended.






3. Scoop into the jars or containers and place in the fridge to set for at least 3 hours.


4. Serve chilled.

    1. Hi, I used a big mango bought from NTUC. Sorry I didn't weigh the mango flesh.
