Greek Yogurt Banana Walnut Bread - Chobani Greek Yogurt


This super healthy Greek Yogurt Banana Bread is made without any addition of butter or oil. 

Yes, you heard me right...No butter or oil.

Wait a minute! Wouldn't the cake be dry? On the contrary, it is not.

This is yet another loaf cake I've made adding Chobani Greek yogurt to give it the moistness and softness I love like the cake here and here, sans the butter .


I'm loving how the cake has turned out. Not only is it naturally sweetened with banana flavour and loaded with the crunch from the walnuts, much guilt has been reduced due to the total cut off of any butter or oil. To top it off is the fact that Chobani Greek yogurt has only less than 2% fat!


Bake a loaf of this wonderfully healthy and moist cake and enjoy it with a scoop of ice cream like I did, in rainbow fashion!



Greek Yogurt Banana Walnut Bread
makes a 8" x 3.5" x 3" loaf tin

Ingredients:
180g cake flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

2 eggs, lightly beaten
2 large bananas, mashed
150g brown sugar
135g plain Chobani Greek yogurt
1 tsp vanilla extract

80g walnuts, chopped

Method:
1. Preheat oven to 180C.

2. Line loaf tin with baking paper. Set aside.


3. Sieve flour, baking powder and baking soda. Add in salt and mix well. Set aside.



4. In a large mixing bowl, add in mashed bananas, brown sugar, Greek yogurt, lightly beaten eggs and vanilla extract. Stir until well combined.





5. Add in the chopped walnuts. Mix well.



6. Pour in the flour mixture and fold into the wet ingredients till just blended. Do not overmix.




7. Pour the batter into the lined loaf tin.


8. Bake in preheated oven at 180C for 35-45 minutes.

9. Remove from oven and cool cake in the loaf tin on a wire rack till completely cooled.
