It was a rainy day and I decided to make some comfort soup to enjoy on a lazy weekend. I came up with this Cream of Broccoli since I've some broccoli in the fridge and I've not made this soup before.
This is a very hearty soup that you can have just on its own as a simple meal!
Cream of Broccoli
serves 4
Ingredients:
350g cut broccoli, drained after soaking
2 potatoes, peeled and roughly cut
1 large onion, diced
Mushroom powder, to taste
Salt and pepper, to taste
Water, enough to submerge all the ingredients
Full cream milk, to taste
Whipping cream, to taste (optional)
2 tbspn oil for frying
Method:
1. Boil the potatoes till softened. Drain away the water and set aside.

In a pot, add oil. Add diced onion and fry till fragrant. Add in mushroom powder (I added about 1 1/2
tsp), salt and pepper and give it a good mix.
3. Add in the potatoes and broccoli and give it a good stir.
4. Add in water and some milk till all the ingredients are submerged and let it simmer for about 15 minutes.
5. Using a hand blender, blend all till it's well pureed.
6. Add in cream to achieve richness desired. Add in salt and pepper, to taste.
7. Serve warm.
