This super cute Calico Cat Cookies have gained big THUMBS UP from my family. The cookies are done using the rub-in method and the cookies are shaped using a super cute cat cookie cutter.
I was lazy to use my hands to do the rubbing-in and relied on my k-beater to do the job. The most tricky part of the preparing the cookie was the unmoulding as the tail tended to break easily. But not to worry, I just used the handle of a spoon to gently push out the broken tail and joined it back to the cat. Haha! They will come together when they are baking!
It’s fun making this cookie. Definitely a great way to to this with your family too!
Calico Cat Cookies
makes about 22
Ingredients:
140g unsalted butter
60g icing sugar
1/4 tsp salt
1/4 tsp baking powder
240g sieved cake flour
Dough (A) - about 15g
1/4 tsp Coffee or Chocolate emulco
Dough (B) - about 15g
1/4 tsp charcoal powder
Dough (C) - balance about 190g
Method:
1. Mix cake flour, icing sugar, salt and baking powder in a mixing bowl.
2. Add butter to the flour mixture and rub in the butter using the k-beater until a dough is formed. (It will look like pop corns then use hand to form a dough.)
3. Weigh out into 3 dough (2x15g and balance 190g).
4. For the first 15g dough (Dough A), mix in coffee/chocolate emulco. Set aside.
5. For the second 15g dough (Dough B), mix in the charcoal powder . Set aside.
6. Roll out the balance cookie dough to 0.5cm thickness onto a plastic sheet.
7. Randomly place the cofee/chocolate and charcoal dough on the rolled dough. Roll until the thickness is even.
8. Chill the dough till it firms up.
9. Cut out the dough using the cat-shaped cookie cutter. Unmould and place the cat-shaped cookie onto a lined baking tray.
10. Bake in preheated oven at 160C for 15 x 17 min or until golden brown.
11. Cool on wire rack when done and store in container when totally cooled.
