Piggy German Cookies


To usher in the year of the Pig this coming Lunar New Year, I am joining the bandwagon to make these cute melt-in-the-mouth Piggy German Cookies by adapting from the recipe here.

The kids were simply over the moon when they saw these cuties. This is in addition to the oreo treat that they are getting in the Oreo German Cookies.



Here's presenting my 3 Little Pigs..



Piggy German Cookies
makes 50 cookies

Ingredients:
125g cold butter, cubed
40g icing sugar, sifted
1 tsp vanilla extract
125g potato starch
80g cake flour
Some pink food colouring
Some black sesame seeds for the eyes

Method:
1. Mix the potato starch and cake flour together. Set aside.



2. Cream butter and icing sugar till creamy. Add in vanilla extract and mix well.




3. Add in flour mixture and fold into creamed butter using a spatula till there is no traces of flour. Do not overmix. (I scooped out some dough and added pink food colouring for the pig's nose and ears)



4. Shape white dough into balls (I rolled to about 2cm size) and add on the nose and ears using the pink dough. Add black sesame seeds as the eyes. Place on lined baking tray. (If the dough is sticky, chill before shaping)



5. Chill in fridge for at least 30 minutes. 

6. Bake in preheated oven at 160C for 30 minutes. 

7. When done, let cool on wire rack completely before storing in airtight container.
