Almost Famous Amos Chocolate Chip Cookies


I've just realised that I've not posted this Almost Famous Amos Chocolate Chip Cookies I've been using for the longest time here.

So here it is...one of the secret ingredient is the coffee oil. You will need to prepare ahead by beating egg, coffee oil and vanilla extract together and let this mixture mingle and mature in the refrigerator overnight before using it to make the cookie dough.


The aroma of this cookie while it's in the oven is just incredible.

For convenience, I usually make a batch of cookie dough and keep spoonfuls of the cookie dough in Ziploc bags in the freezer. This way, I can just bake any quantity I want as and when I have a craving for these decadent cookies. (Just remember to add in another few minutes to the baking time)


These cookies usually get wiped out rather quickly. So I normally have bagful of these cookie dough in my fridge on standby.


Almost Famous Amos Chocolate Chip Cookies
recipe adapted from here
makes about 90 pieces

Ingredients:
Part A (prepare in advance)
1/2 tsp coffee oil
1 egg
1 tsp vanilla extract

Part B
250g unsalted butter, softened 
200g light brown sugar
1/4 tsp salt (omit if using salted butter)

Part C
1/4 cup rolled oats, grounded
1/4 cup ground almond (I ran out of ground almond and blitzed almond slices in food processor to get ground almond)
1/2 cup toasted walnut, finely chopped or any nuts of your choice (I ommitted)
250g chocolate chips
300g self raising flour, sifted (I used plain flour plus 1/2 tsp baking powder)

Method:
Part A
1. The most important step here is to prepare this ahead overnight. Beat egg, coffee oil and vanilla extract together and refridgerate overnight. 



2. Preheat oven to 180C.

Part B
3. Beat butter, sugar and salt. 



4. Beat in egg.



Part C
5. Fold in the sifted flour. (Do not overmix. This dough will not be too stiff or too wet)


6. Stir in in the processed oats, ground almond, chopped nuts and chocolate chips.



7. For small cookies, place 1/2 tsp of the dough slightly apart on a lined tray and bake in preheated oven for about 10 min. For large cookies, place 1 tbsp of the dough slightly apart on a line tray and bake for 20-22 min. (I will put in freezer for about 5 min before baking)


8. Let cool completely on wire rack before storing in an airtight container.
