Quick & Easy Chocolate Chocolate-Chip Muffins (Nigella Lawson)



This is a batch of awfully rich, chocolatey and yummy muffin that I've made using a recipe from Nigella Lawson's Feast. 

If you need to de-stress, there's nothing more comforting than working with chocolates and making these chocolatey muffins. If you are looking for comfort food, then there is nothing more comforting than having a warm chocolatey muffin like this. Every mouthful just sets your heart a-flutter and ease your troubled mind.

This is a mix wet and dry ingredients kind of muffin recipe. Very easy to do in a short time with very little washing required. Sounds good, doesn't it? 

This recipe is definitely a keeper!



Chocolate Chocolate-Chip Muffins
recipe adapted from Nigella Lawson's Feast
makes 12-14 muffins

Ingredients:
250g plain flour
2 tsp baking powder
1/2 tsp baking soda
2 tbspn good quality cocoa powder
120g castor sugar (reduced from the original 170g sugar)
150g chocolate chips, plus 1/4 cup for sprinkling
1 cup (240ml) milk
80ml vegetable oil (I used canola oil)
1 egg
1 tsp vanilla extract

Method:
1. Preheat oven to 200C.

2. Put the flour, baking powder, baking soda, cocoa powder, sugar and 150g chocolate chips into a large bowl and mix well.

3. In another bowl, mix together all the wet ingredients. Add egg and mix well.

4. Mix the dry and wet ingredients together with gentle strokes, remembering that a lumpy batter makes the best muffins.

5. Spoon batter into prepared muffin cases.

6. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.
