Tomato Egg


This is one of the dish I will order from stalls at the food court. It is a simple dish that you can whip up very easily at home as well!

To encourage my family to eat more tomatoes, I have been adding this ingredient to my meals whenever possible. Tomato egg is one such dish.

This dish is basically egg omelet with tomatoes. It uses very easily available ingredients and is such a great accompaniment to a bowl of rice or even porridge!

Tomato Egg
serve 3

Ingredients:
3 eggs
1 tomato
A dash of white pepper
1/4 tsp salt
1 tsp fish sauce

1 tbspn tomato ketchup
2 tbpsn water
1 tsp corn flour
1 tsp sugar

Cooking oil for frying (about 3 tbspn)

Method:
1. To make the sauce, mix tomato ketchup, corn flour, sugar and water together in a bowl. Set aside.



2. Cut the tomato into smaller wedges. Set aside.


3. Add salt, pepper and fish sauce to the eggs and beat together.



4. Heat up oil on high heat in wok or pot. Add eggs and stir fry quickly until evenly cooked and just tender.



5. Remove from heat just before eggs have set completely and transfer to a plate. Set aside.


6. Heat the wok/pot again add in the chopped tomatoes. Stir fry until most of the flesh in the tomatoes has cooked down. Reduce to low heat and add in the tomato sauce mixture prepared earlier. Stir around until the mixture has thickened slightly.



7. Add the eggs back to the wok/pot and stir fry until everything is mixed.



8. Serve hot.

    Thanks for sharing this recipe with the step by step pictures. It is very helpful as I was not sure about the egg texture and when the end product looked a bit liquid, I thought I had made a mistake somewhere during cooking. But when I compared with your end product picture, hey, it's about the same and the taste is even more surprising, very yummy!!
