Snow White Fritters (using Coconut Oil)



I'm making this unstoppable mouth-popping snack like what I did last year here that has many loving it. You can never imagine how easy it is to make this super addictive snack!


However, instead of using normal cooking oil for deep frying, I've used Medella's Organic Premium Coconut Cooking Oil given by Julie from Frosts Food & Beverage.


I really want to give a BIG shout how GOOD this coconut oil is!! Not only is there no unpleasant smell when I opened the bottle seal, it is also superb for deep frying due to its high smoke point. When I was using normal cooking oil for deep frying the fritters previously, I had to be very watchful over the fritters as they tend to burn easily. This was not the case when I used Medella's coconut oil. The experience was just unbelievably pleasant! Even when I was deep frying on high heat, my fritters did not burn at all!!

To top it off, the fritters are also less greasy. I noticed the paper towels used for draining off excess oil was not as greasy as that using normal cooking oil previously.

If the above is not enough to convince one why coconut oil is good, then perhaps its health benefits will. Coconut oil has been consumed in tropical countries for thousands of years and packs loads of health benefits which include but not limited to skin care, health care, improving digestion and immunity against infections and diseases. The main ingredient for this snack is store-bought spring roll pastry. I bought a few packets of this from the supermarket to make a few medium-sized bottle of these yummy fritters.


It is really easy to make.....just roll up the sheets of spring roll pastry - seal the ends with egg white - use scissors to snip into smaller strips - deep fry in coconut cooking oil - remove and drain when golden brown - sprinkle with confectioner's sugar - start popping them into your mouth when it's cooled down. 

Easy peasy, right?

Snow White Fritters

Ingredients:
A packet of spring roll pastry
1 egg white (to seal the ends)
Coconut cooking oil (for deep frying - I used Medella's Organic Premium Coconut Cooking Oil)
Confectioner's sugar

Method:
1. Roll each spring roll sheets and seal the ends by brushing with egg white.


2. Use scissors and snip the rolls diagonally into smaller strips.


3. Deep fry on medium-high heat until they are crispy and slightly golden brown. (I'm using coconut cooking oil which has high smoke point so the fritters do not burn easily even on high heat. If using normal cooking oil, please use medium heat.)



4. Remove and drain away the oil on paper towels.


5. Sprinkle confectioner's sugar over the fritters.



6. Store in air-tight container when cooled.
