Rice Cooker Laksa Fried Rice


For me, laksa has always been served with thick noodles. When I saw this laska fried rice sauce selling at the supermarket, I was super excited at the thought of having another addition to my one-pot fuss-free meals, this time using my rice-cooker!


I love these quick and easy fuss-free one-pot meals. I strongly feel that meals can be this simple, especially on week days/nights.



Rice Cooker Laksa Fried Rice
serves 3

Ingredients:
uncooked rice for 3, washed and rinsed
enough water to cook rice
2 handful of frozen cooked prawns (feel free to use fresh prawns if preferred)
A handful of frozen corn kernels
2 fish cake, sliced
6 tau pok, cut into smaller cubes
1 tsp chopped garlic
2 eggs

Method:
1. Put washed uncooked rice and water in rice cooker. Add in the laksa fried rice sauce and stir well.


2. Add in the chopped garlic, frozen prawns, frozen corn kernels, sliced fish cake and tau pok. Cover with lid and start to cook the rice.




3. When the rice is cooked,gently give the rice a stir using a rice paddle. Create a well in the middle and add the eggs in. Break up the eggs and stir into the rice until well mixed.




4. Keep covered for a few minutes. Serve warm.
