Rice Cooker Kimchi Fried Rice


This is another one-pot rice cooker meals that I just tried out and my hubby gave it thumbs up! Yeah!! 

If you have never ever imagined that Kimchi Fried Rice can be under this one-pot rice cooker meal category, then you have to try this fuss free and super quick and easy way of preparing this meal, without all the grease and sneezing associated with frying and cooking spicy food!

I'm using this korean chilli paste and kimchi bought from the supermarket. I've cut down on chilli paste added and did not add as much kimchi as I would have liked to as my hubby can't take too spicy food.



It's really good!


Rice Cooker Kimchi Fried Rice
Serves 2 

Ingredients: 
1 cup of uncooked rice
200g minced pork (marinated with sesame oil, light soya sauce, a pinch of salt and a dash of pepper for at least 1/2 hour. You can also replace with chicken breast if preferred.)
2-3 crabsticks, sliced
1 tbspn korean chilli paste (adjust according to your tolerance level for spicy food)
5 tbspn kimchi (or as much or as little as you want)

Method:
1. Wash rice, then add water to the rice in rice cooker pot to the appropriate level. Add in chilli paste and stir into the water.



2. Start to cook the rice. Immediately add sliced crabsticks and minced meat onto the rice while it's cooking.



3. Cover with lid and let the rice cook together with the ingredients. 

4. When the rice is about 3/4 cooked, add in kimchi. Cover the lid and continue to let the rice cook.



5. When the rice is cooked, gently give the rice a stir using a rice paddle to mix in with the rice and other ingredients in the process. 


6. Keep covered for a few minutes. 

7. Scoop the kimchi fired rice into serving plate and top with a sunny side up if you want. Serve warm.
