Braised Mixed Mushrooms


I seldom cook braised dishes. This is one of those rare ones that I am trying a braised dish based on a friend's sharing of how she does hers when she showed us the packet of mixed mushrooms bought from the dried food stall at Fu Lu Shou building in Bugis. 

This is how the packaging looks like. I managed to buy a pack for myself to try out this one-pot dish shared by my friend.

My friend is a vegetarian so she did not add in any meat. Her version of the braised dish uses all vegetarian sauces like vegetarian oyster sauce and 'meat' like vegetarian chicken. I tried to replicate her method but mine is not a vegetarian dish as I've added real chicken pieces and used oyster sauce. I've also thrown in some tau kua for added variety to the dish. There are no hard and fuss rules on what you can add to complete this dish.

I liked this 'mushroomy' dish. It's a simple, versatile, 'mushroomy' flavorful, fuss-free one-pot dish that you can pair with a bowl of rice, porridge or vermicilli.

Braised Mixed Mushrooms

Ingredients:
1 packet mixed mushrooms
400g boneless, skinless chicken breast, cut into smaller pieces (seasoned with some 1/4 tsp salt, 1 tbspn light soya sauce, 2 tbspn dark soya sauce and a dash of sesame oil)
1 tau kwa, cut into smaller cubes
some oil for frying
some water
2 tbspn oyster sauce
mushroom seasoning (to taste)
corn starch and water for thickening the sauce

Method:
1. Rinse soak the mixed mushrooms for several minutes. Drain and set aside.


2. In a pot, brown the chicken in a little oil. There is no need for the chicken to be cooked through as it will be cooked further with the sauce later.


3. Add in mixed mushrooms and give it a good stir.



4. Stir in oyster sauce and water till it covers the mushrooms. Cover the lid and let it simmer until the mushrooms are softened. Give it a stir occasionally and water if it dries up.


5. Add in the tau kwa and give it a stir.


6. Add some water if the water level has dried up and I also added some mushroom seasoning (to taste) as I love this mushroomy seasoning and the addition of water has also made the sauce a little bland.



7. Continue to braise for another 15-20 minutes.

8. Remove from heat and serve.
