Tomato Ba Kwa Rice


This is one year where I have lots of ba kwa not opened and unfinised after the Lunar New Year. I've put them in the freezer so that they don't spoil and go to waste. Meanwhile, other than having this treat as our occasional weekend snack, I'm using some of these ba kwa to my dinner table!!

As a busy working mother, I always try to find the fastest way to do things. If I cook, other than being yummy, it has to be quick, simple and preferable minimal washing up! This is one of those fuss free, quick and easy one-pot meal using a rice cooker that I so love. Cooking and washing up are all done under 30 minutes!

I've added my star ingredient - ba kwa to make this one-pot rice cooker meal. This is a very flavorful dish and is a super easy and flexible dish to prepare.


Tomato Ba Kwa Rice
Serves 6

Ingredients: 
2 cups of uncooked rice
water to cook the rice
1 tomato, with stem removed
1 cup frozen mixed vegetables
5 hotdog, sliced
5 crabsticks, sliced
1 cup frozen cooked prawns 
3/4 tsp salt
A dash of pepper
3 tsp olive oil

Ba kwa, cut into smaller pieces (as little or as much as you want)
3 eggs 

Method:
1. Wash rice, then add water to the rice in rice cooker pot to the appropriate level.

2. Remove 6 tbspn of the water (this is the amount of water released from the tomato), then add salt, pepper and olive oil. Mix well. 

3. Place the prepared whole tomato in the middle of the rice cooker pot. Add in all other ingredients except the egg and ba kwa around the tomato.


4. Cover with lid and start to cook the rice.

5. When the rice is almost cooked, add in the ba kwa pieces. Put the lid on and continue to cook the rice.

6. When the rice is cooked, gently give the rice a stir using a rice paddle, breaking up the tomato to mix in with the rice and other ingredients in the process. 

7. Create a well in the middle and add the eggs in it. Break up the eggs and stir into the rice until well mixed.


8. Keep covered for a few minutes. Serve warm.

  1. Good idea. I've added bak kwa to fried beehoon before but this recipe is much easier and sounds yummy too!
