This is one cake that I do not have to worry letting my girl eat even though there is an obvious coffee aroma from every slice.
Well, it's decaffeinated! No worries about not being able to sleep after taking this delectable snack that is full of coffee aroma and nutty almond fragrance!!
I'm using Aromantic Instant Powder Beverage as shown below for the 'decaf coffee'. The ingredients in this beverage is very healthy and nutritious. (I'm not paid for mentioning this instant powder beverage but just sharing what I thought is good stuff. You can always use the normal instant coffee powder if you do not want it to be decaffeinated.)
I've also added coffee oil to further enhance the coffee aroma.

Decaf Coffee and Almond Cake
makes a 8" x 3.5" x 3" loaf cake
Ingredients:
120g cake flour
1 1/2 tsp baking powder
120g unsalted butter, at room temperature
50g brown sugar
50g caster sugar
1/4 tsp salt
1/4 tsp salt
2 eggs
1 tsp coffee oil
1 packet decaf instant coffee powder dissloved in 1 1/2 tbspn hot water
60g ground almond/ almond meal
Some almond flakes to sprinkle on the cake
Method:
1. Preheat oven at 180C. Line a loaf tin with parchment paper.
2. Sieve the flour and baking powder. Set aside.

3. In a large bowl, cream butter and sugar until pale and fluffy.
4. Add egg, salt and coffee oil. Beat till well incorporated.
5. Add ground almond and give it a quick mix.
6. Add in the sifted flour and beat till just incorporated.
7. Add in the coffee mixture and whisk them together.
8. Pour cake batter into lined loaf tin and even the top with a spatula.
9. Sprinkle some almond flakes onto the cake.
10. Bake in preheated oven for 30 minutes or when an inserted skewer comes out clean.
11. When done, cool completely in the tin on the wire rack before unmoulding.
12. Enjoy!
