Granny Boyd’s Biscuits



This recipe caught my eye while flipping through Nigella Lawson's How To Be A Domestic Goddess. I think this will be a lovely Valentine's Day treat with your loved ones especially when you pair it with generous scoops of vanilla ice cream!

What caught me was her mention that "I don't think there is a more chic accompaniment to a tub of good vanilla ice cream: they're sturdy - in shape and form like Bendick's Bittermints - dark, smoky and melting." The next thing that make me decide to try out this chocolately recipe was how simple it is to make and how easily available the ingredients are. (Btw, 'Granny Boyd' is the granny of Nigella's editor Eugenie Boyd, who gave her the recipe.)

It's chocolately, crumbly and every bite of the biscuit just seem to 'melt' like sand in your mouth. As suggested by Nigella, I tried these cookies with vanilla ice cream and they go really well.

You can't go wrong with chocolate. Make a batch of these, enjoy with your loved ones and fall in over and over again! :)

Granny Boyd’s Biscuits
Adapted from Nigella Lawson's How To Be A Domestic Goddess
makes about 35

Ingredients:
300g self raising flour
30g cocoa powder
250g unsalted butter, at room temperature
125g caster sugar (I used 120g fine sugar)

Method:
1. Preheat oven to 170C (I preheated mine at 180C)
2. Sieve four and cocoa powder. Set aside.
3. Cream butter and sugar until pale in colour.
4. Mix in the flour mixture. (It may look abit dry. DO NOT be tempted to add in any liquid. Keep mixing until it forms a dough)
5. Roll the dough in walnut sized balls and arrange on lined baking sheets.
6. Flatten these balls with the back of a fork.
7. Bake at 170C for 5 minutes, then turn the temperature down to 150C for a further 10-15 minutes. (I bake at 180C for 15 min)
8. The biscuits should feel firm on top although not hard. Remove from the oven and transfer to cool on a wire rack, before storing in air-tight container.
