Pumpkin Porridge with Minced Meat & Braised Peanuts


Feeling too lazy to go out for meals so cooked this one-pot meal for the family. Super easy and fuss free!

I used my rice cooker to cook this one-pot dish and we were able to have a hearty meal all within 30 minutes.


Pumpkin Porridge with Minced Meat & Braised Peanuts
serves 2-3

Ingredients:
1 cup rice, washed and drained
150g minced meat, marinated with soya sauce, sesame oil and a dash of pepper
150g pumpkin, de-seeded, skin removed and cubed
1 can of braised peanuts (I used Mili brand)
a handful of silverfish and dried scallops (optional)
water to cook porridge

Method:
1. Put all ingredients except minced meat and braised peanuts into pot and cook.
2.When rice is softened, add in braised peanuts and continue to cook the porridge, making to sure to keep stirring so that the porridge does not stick to the bottom of the pot.
3. Using a spoon, scoop the minced pork into a round ball and add into the porridge.
4. When the meat is cooked, scoop porridge into a bowl and serve hot.

Note : 
If you prefer a more hong kong style congee, cook the porridge for a longer time, stirring constantly. As pumpkin cooks quite fast, you can also add in pumpkin later.
