Cranberry & Oat Cookies


I was deciding what to bake for my girl to bring to school for their Children's Day celebration. Something with chocolate and berries but not too chocolatey...and finally decided on making Cranberry & Oat Cookies.



I tried a few of the cookies when it's out of the oven and liked them immediately. Definitely suitable for the kids!



Cranberry & Oat Cookies
Adapted from Alan Kok's "I Love Tasty & Healthy Treats"
(My notes in red below. I used 1.5 times of the recipe below to make 120 small cookies)

Ingredients:
160g butter (I used 240g unsalted butter)
80g confectioners' sugar (I used 120g)
1/2 egg (I used 1 egg)
1 tsp vanilla extract
150g plain flour (I used 225g)
1/2 tsp baking powder (I used 1 tsp)
50g dried cranberries, coarsely chopped (I used 75g)
50g chocolate chips (I used 75g)
150g rolled oats (I used 225g)
50g walnuts, coarsely chopped (I used 75g)

Method:
1. Preheat oven to 160C. Line baking tray with baking paper. (I preheat oven to 180C)

2. Cream butter and confectioners' sugar till light and fluffy. Add egg and stir well. Add remaining ingredients and mix into a dough.



3. Divide dough into small portions and arrange onto the lined baking tray. Use fork to press lightly. (I did not press the cookie dough with the fork)


4. Bake in preheated oven at 160C for 15 - 20 minutes or till cooked. (I baked in preheated oven at 180C for 20 minutes)

5. Remove cookies from oven and leave to cool on wire rack before serving or storing in an airtight container.

  1. by just judge from the photos, this cookies must be very crunchy and can eat non stop, so lucky your girl can share this yummy cookies with her friends.

  3. Hi, what brand of unsalted butter did you use? As I have tried your recipe but I want it to have more buttery taste.
    Do I add more butter? Will it affect the texture of the cookies if I do so?
    Or do you have any suggestions?
