Hot Cross Buns



It's going to be Easter and I decided to bake a batch of hot cross buns.

This is a very simple recipe and will definitely look at tweaking it to make a few other batches.



Hot Cross Buns
makes 9 buns

Ingredients 

Part A
150g lukewarm milk
1 large egg
1 tsp vanilla extract

Part B
330 bread flour
30g brown sugar
1/2 tsp salt
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder
1 1/2 tsp Instant yeast

Part C
30g unsalted butter
70g raisin (soaked in rum - optional)

Egg wash
1 egg, lightly beaten

For the cross
Mix water bit by bit to 2-3 tbspn flour until a paste forms

Method
1. Lightly mix all wet ingredients in Part A and pour into the pan, followed by the dry ingredients in Part B or by following your breadmaker manufacturers' instructions regarding the order of liquid/dry ingredients.
(I'm using Zojirushi breadmaker. I placed all the wet ingredients first, followed by the dry ingredients. Make a dent at the centre of the flour and pour the yeast in the dent last, making sure the yeast does not touch the liquid, sugar and salt.)



2. Make the selection for 'Pasta Dough' setting on your breadmaker.
(For my Zojirushi breadmaker, I chose the 'Cookie/Pasta Dough')

3. Press start and the machine will start kneading the dough. The machine will beep after a few minutes. Press start to continue kneading.

4. After the machine has finished its course of kneading under 'Pasta Dough' setting, make the selection for 'Dough' setting.

5. Press start and the machine will start kneading the dough after resting for 15 minutes. Add in the butter during this resting stage.


6. Add in the raisins in between the kneading. 


7. Let the breadmaker do the rest.

8. When the bread dough is proofed, the machine will beep to signal the end of the 'Dough' function. Remove dough from the pan, punch it down and divide into 9 portions.



9. Roll up each dough portion into round balls and place in a 9" square tin and let it proof for another hour.  






10. Apply egg wash onto the buns and pipe a cross over each bun.



11. Bake in preheated oven at 190C for 18 minutes or until golden brown. Tent if the top gets too dark.

12. When the buns are done, remove from the oven immediately and let it cool on a wire rack.
