This is a super easy Mango Pudding to put together ahead of time. I've some friends coming over this weekend and I've made this ahead of time so that I can spend time catching up with them rather than being busy preparing food or snacks for my guests.
Easy Mango Pudding
Serves 4
Ingredients:
3 tsp gelatine powder
1/3 cup sugar
1/2 cup water
2 ripened mangoes
1 cup coconut milk (can replace with evaporated milk)
Method:
1. Add the sugar and gelatine powder to the water and double boil the mixture over a water bath till the sugar and gelatine is completely dissolved. Stir constantly to ensure there is no lumps. Set aside.
2. In a blender or food processor, puree the mango flesh.
3. Add the gelatine mixture and coconut milk into the pureed mango and continue to blitz till all the ingredients are well combined.
4. Scoop into desset bowls or containers and place in the fridge to set for at least 3 hours.
5. Serve chilled.
